Low carb ideas would be good also.
I'm sorry but for special occasions, I don't count calories.
That having been said, I do suggest this rack of lamb recipe, which is both zero carb and delicious:
Score the fatty side of the rack and smear garlic butter all over. Press fatty side into some finely crushed Chicharones (deep fried pork rinds, either spicy of regular). Bake at 350 for about 30 minutes. Never overcook lamb. It tastes dreadful if cooked beyon medium.
The best sides are not carb free: par boiled tiny red potatoes with the skins semi peeled so that they appear striped. Serve these in a simple cream sauce made with fresh dill. Serve with roasted asparagus.
Takes about 45 minutes from prep to table and is always a pleaser.
