Galloping Horses

Can anyone please describe to me what happens during a galloping horse animation? Do all 4 feet leave the ground, or is 1 always on the ground? What is the theory and proof of this?
Photos taken sequentially with a high speed camera work pretty good, but the old 1800's thing where a horse was ridden down a set path, and cameras were triggered as the horse broke the strings attaching to the cameras (taking the first 'animation' pictures was the earliest use.
Actually, if you have the Kentucky derby on your tv, record it, then use the pause button to stop motion the horses. It works the same.
There's plenty of photographic proof of each gait. A gallop has all four feet off the ground at the same time. So does a canter.
